Fiesta Breakfast Casserole

This is the perfect quick healthy breakfast casserole for a large family, a Saturday morning brunch with friends or to freeze for single serve portions! This recipe is a THM- S Meal; Low carb; Keto friendly recipe.

I am always on the hunt for multi serve breakfast recipes. When I come across a recipe that I can freeze the leftovers for quick pre-made breakfasts that’s even better. Today I am bringing you one of those recipes! This is one of those perfect quick healthy breakfast meals. Super simple to throw together!


Storing for Later use:

I pack my husbands breakfast, lunch and snacks for him daily. He usually has to have a cold lunch, where he doesn’t work in an office setting. So we pack his lunch with that in mind. I like to pack him a breakfast he can warm up on the way out the door. When I find a multiple serving recipe I just freeze the left-overs in individual servings. I love being able to pull them out of the freezer. Allowing them to thaw in the fridge so he’s good to go the next morning!

This recipe includes eggs and egg whites is because you can have too much of a good thing. You don’t want to over do the healthy fats by over loading it with too many egg yolks. I have included other healthy fats in this meal to go along with the egg yolks.

Feel free to swap out the veggies if you prefer another combination. I personally have never tried this as we prefer the spinach for the light/mild taste. You really don’t even know its there except for the color. This casserole is full of beautiful color. Changing the peppers would give it a hint of sweetness which would be a nice addition.

I prefer my peppers and onions cooked so for this recipe. So I sautéed them in the leftover grease after cooking the sausage for a few minuets. Just until soft you don’t want to over cook them because they will also be cooked in the casserole.


INGREDIENTS:

  • 1 lb Sausage

  • 4-6 oz Spinach Rough chopped

  • 1 10 oz can Rotel drained

  • 3/4 cup Chopped green peppers

  • 3/4 cup Chopped Onion

  • 6 Eggs

  • 1.5 cups Egg Whites

  • 2 cups Shredded Cheese divided

  • 1/2 tsp Salt

  • 1/8 tsp Ground Black Pepper


INSTRUCTIONS:

  1. Preheat oven to 365 degrees

  2. Grease a 9 X 13 baking dish with coconut oil spray

  3. Layer spinach in the dish

  4. Cook sausage

  5. Sauté peppers, onions in sausage grease until soft, then add in rotel add sausage back into the pan and mix thoroughly

  6. In a separate bowl beat eggs, and egg whites Add 1 cup of cheese to egg mix

  7. Layer Sausage, veggies mix on top of spinach

  8. Layer Egg, Cheese mix on top

  9. Lightly use a fork to combine

  10. Add remaining cup of cheese to the top

  11. Bake for 30 mins or until bubbly and slightly browned on top
